The art of roasting coffee beans

The master roaster is trained in the art of blending beans and mixes them in precise percentages that render superb results. The green coffee beans of the various kinds are roasted individually in an interval lasting between 15 to 18 minutes. During the roasting process the beans take on a hue ranging from light to dark brown and transform yet further, losing moisture and doubling in size.

Internally, tiny cavities are formed filled with carbon dioxide, which develops spontaneously and replaces the moisture content of the raw beans. During the rest period immediately after roasting, the surface of the coffee beans acquires an oily layer composed of volatile fragrant molecules, a delicate substance of great value to Segafredo coffee. The skills and experience of our master roasters control the result of the process and guarantee the enjoyment of a delicious espresso every time.

Our ‘Premium Blends’ are made from the world’s very finest Arabica beans (Our premium blend ‘Classic’ contains some best sourced Robusta beans as well). At the end of the day coffee is only as good as the farm that plants and harvests it. Great coffee beans doesn’t necessarily come from farms with perfect soil and weather conditions. Be it single farmers or big coffee plantation owners, they have to genuinely love their coffee trees and greatly care for them. It all comes down to enthusiasm and management, throughout the entire course of planting, pruning, harvesting, drying and eventually wet- or dry-processing the coffee cherries.

Premium means that we subject the bean screening and roasting process to the very highest standards at our roasting plant. Over the years, Boncafe have made significant investments into all facets of green coffee processing. We’ve even invented and developed new methods to upgrade green coffee, by separating the beans with bitter or undesired taste from the good ones. We sort the coffee beans by specific weight and color, and some beans are further subjected to a special cleaning procedure. For the premium blends, our roast masters, with their years and years of experience, rigorously and strictly select only beans with the best promise of top-quality taste in each cup. After roasting these carefully selected beans, each batch is cup-tasted not by just one roast master, but by our whole QC (quality control) team. They are the executive chefs of coffee. It’s not easy for the beans, whether green or roasted, to please them.

The ‘Misty Mountains’

Arabica is grown on plantations in Northern Thailand, mainly in the following provinces: Chiang Mai, Chiang Rai, Lampang, Mae Hong Son and Tak.

Arabica trees thrive at higher altitudes, which in Thailand is between 800 to 1,500 meters. In these altitudes, the beans mature at a slower pace producing generally a richer, denser, more flavorful bean. Arabica in Thailand is still in a kind of experimental stage, which helps explain its low yearly harvest. Most Thai Arabica coffee is grown by small holders, such as hill tribe families and villages, as well as in research stations (Wawi, Chang Khian, etc.) and development programs. The few hundred tons of beans that are annually picked are brought almost entirely by local traders and roasting factories for producing roast and ground coffee.

The ‘Red Earth’

Robusta is grown on plantations in Southern Thailand, mainly in the following provinces: Surat Thani, Chumporn, Ranong, Nakorn Si Thammarat, Phang-Nga and Krabi.

 

Robusta coffee grows in lower altitudes. For the growers, Robusta has many advantages: the trees are easier to cultivate, more disease-resistant, can tolerate larger temperature and moisture extremes, produce more beans and their fruits mature considerably quicker than their Arabica counterparts. At the same time, Robusta is generally regarded as lesser quality beans and accordingly yield lower prices. Thai Robusta is of good quality and internationally well established. Major export markets are the United States, Europe, Japan and Singapore. In the local market, Robusta is mainly used for all kinds of canned coffee drinks as well as soluble coffee. Proper processing and new roasting technologies, however, allow gourmet and bean coffee roasters to also create good quality blends with Thai Robusta.
